Winery Trifolium
The young winemaker Kristian Keber crafts a cuvée from three native grape varieties, rooted in sustainable practices. The winery is guided by a philosophy that emphasizes biodiversity and is inspired by the trifolium (three-leaved clover), which symbolizes fertile soil. The site includes permeable walls, an opening to observe the sky, and gravity-driven production processes. A discreet design stabilizes the flysch rock with concrete piles, seamlessly blending into the landscape. The spaces for production, fermentation, and storage reflect the purity of the three grape varieties that define the wine—a harmonious trio of stone, steel, and concrete.
